Jennifer's Tortilla Taco Pie

Ingredients

    12 oz extra lean ground beef
    1 pkg McCormick 30% Less Sodium Taco Seasoning Mix
    1/2 cup water
    1/2 cup Great Value petite diced tomatoes

    4 8-in flour MISSION tortillas
    1/2 cup Rosarita Traditional No Fat Refried Beans
    1 1/3 cups Great Value fiesta blend finely shredded cheese

    sour cream, fat free, Great Value (optional)
    lettuce, shredded (optional)
    green onions, diced (optonal)
    black olives, sliced (optional)

    Other items:
    pam
    9 inch pie plate

Tips

You can also substitute grilled chicken or ground turkey for the ground beef. It is delicious this way too. Optional items are not included in the calorie breakdown.


Directions

Preheat oven to 350 degrees. Brown beef & drain well. Combine with water, diced tomatoes, & taco seasoning and simmer 15 minutes. While simmering, coat 9 inch pie plate with pam. Place 1 8-inch tortilla in the bottom, & spread 1/4 of refried beans on tortilla. Top with 1/3 of beef mixture, sprinkle with 1/4 of cheese. Repeat this process two more times. End with a tortilla. Top this with refried beans & cheese. Bake in the oven for 25 minutes. Garnish with optional items (sour cream, lettuce, black olives, green onions). Let rest for 5 minutes. Cut into 8 pie pieces.

Serving Size: makes 8 equal pieces
