Zucchini Quesadilla

Ingredients

    1 tortilla, Ole Xtreme Wellness High Fiber Low Carb
    1/3 cup cheese, fiesta blend, finely shredded
    1 cup, zucchini, diced

    other items:
    pam spray
    George Foreman or saute pan

Tips

you can combine squash/zucchini/onions - there are many options! Try chopping and grilling all your veggies at the beginning of the week for time savings. You can them use the microwave to warm the veggies while the tortilla warms.


Directions

After spraying saute pan with pam, grill diced zucchini until tender about 5-7 minutes. Using a George Foreman or a saute pan, warm tortilla on both sides melting cheese on the last side to be warmed. Place grilled zucchini inside tortilla and fold in half. Grill closed in George Foreman or saute pan. Remove and let set for 3-4 min. Enjoy.
