Mary's black beans and veggies



Introduction

no added fat or sugar! way yummy!!! no added fat or sugar! way yummy!!!
Number of Servings: 4

Ingredients

    1 can black beans
    1 medium onion chopped
    2 small sweet yellow bell peppers
    1 jalapeno
    two tomatoes, cut in small pieces
    water or vegetable broth ( to keep veggies from getting too dry, and to help them cook better)
    seasonings to taste
    black pepper
    cayenne pepper
    cumin
    basil
    cilantro

Directions

I cooked the onions first with enough water to keep them from being too dry... and a lid over the top...after they were cooked well, I added the peppers and let them cook a little.(i used a little water, but I think vegetable broth would have been better) then I addded the beans and tomatoes..then the seasonings. a little black pepper, red pepper and some cumin. I think adding cilantro would have been good too!

Serving Size: makes about 4, 1 cup servings
