Sweet Spinach and Avocado Salad

Ingredients

    - 2 cups fresh spinach or baby spinach leaves
    (this will form the leafy base of your salad)
    - 1 cup boiled and sliced beets
    - 1 cup grated raw carrots
    - 1/2 avocado, sliced
    - 1/3 cup chopped walnuts
    - 1/3 cup raisins
    - 1 tablespoon of your favorite dressing. a fat-free sweet dressing works well with this, like a citrus or raspberry dressing; something with tang. you can also mix a little lemon juice and olive oil for a subtle, but yummy taste.

Directions

The best way to cook the beets is to steam them, whole and unpeeled, for about an hour or until soft. Then peel them- the easiest way to do this is to put the hot beets under cold streaming water and the peels will come right off. Then slice them and they are ready to go.

Toss all ingredients in a large bowl with spinach and your choice of dressing. If you want to cut back on the calories, remove the avocado and you will have a very low calorie, delicious salad with tons of nutrients. Try removing the avocado and mixing in a few fresh blueberries instead. Or, if you can go slightly higher on the calories, take out the avocado and put in some soft goat cheese. Then, you won't need any dressing!
