Introduction

Quick, homemade energy bar. This really satisfies my sweet tooth, and thanks to all the healthy fats it will make you feel full and satiated for several hours. Number of Servings: 16

Ingredients

    +Earth Balance or other nondairy buttery pread, 4 tbsp
    +Agave Nectar, 2 tbsp
    +Dark Corn Syrup, 2 tbsp
    +Sugar Free Maple Syrup, 1/4C
    +Coconut flakes, sweetened, .1/2C
    +Corn Flakes 3-4C (can use rice krispies, Special K, Grape +Nut Flakes, or any other light crispy cereal)
    +Peanut Butter, 1/2C
    +Mixed Nuts, 1/2C
    +Semisweet chocolate chips, 3/4C

Tips

Although these bars are very sweet they are still relatively low-to-mid glycemic thanks to the protein, healthy fats, and sugarfree syrup. To make even less sugary, you could substitute sugarfree maple syrup for the agave and corn syrup as well. If the mixture doesn't hold together as well, just add more peanut butter.


Directions

Heat Earth Balance, agave, syrups, and 1/4C of the PB over low heat until melted. Tjen add in oats, nuts and coconut flakes.

Remove from heat and stir in cereal. Once mixture has cooled slightly, stir in 1/4C of the chocolate chips and spread in a small casserole dish or large bread pan.

Return saucepan to medium-low heat and melt the remainder of the chocolate chips (1/2C) and peanut butter (1/4C)

Press down and flatten out bars in the pan to desired density, then spread melted chocolate mixture evenly on top and garnish if desired. Chill in fridge for 1 hour then cut evenly into 16 bars. Enjoy!

Optional: Sprinkle additional coconut flakes, nutmeg, cinnamon, sunflower seeds, and/or pumpkin seeds on top

Serving Size: makes 8 bars (about 4' x 1')
