Number of Servings: 6

Ingredients

    1.5 lb ground beef
    1 cup onion, chopped
    1/2 celery, chopped
    4 cups zucchini sliced
    1 cup mushrooms
    1 cup carrots
    3 cloves garlic
    1/2 tsp salt
    1/2 tsp pepper
    1 tsp sriracha sauce
    1 cup tex-mex light cheese

Directions

Brown ground beef with celery, mushrooms, carrots and onion, add garlic and sauté for a minute. Drain well and rinse. Add zucchini and seasonings. Simmer on low until zucchini is done. (I like mine tender-crisp). Add cheeses and remove from stove burner. Cheese melts and ready to eat. Makes 6 servings.
