1 cup quinoa, cooked
4 tbsp lemon juice
2 bunches parsley
6 scallions finely sliced
1 cup chopped almonds
I changed nothing about this original recipe and it was delicious. I'm going to make it again very quickly. Made it a meal by also having some hummus and little bit of whole wheat pita.
