Introduction

Easy, hearty, filling, low calorie, low fat, no carbs,one pan, and it tastes good! Easy, hearty, filling, low calorie, low fat, no carbs,one pan, and it tastes good!
Number of Servings: 4

Ingredients

    3/4 lb cod
    3 cloves garlic
    4 large baby carrots or 1 reg carrot, diced
    1 large red pepper, diced
    1/2 cup diced celery
    1/2 cup diced onions
    1/2 tbsp olive oil
    1 (28 oz) can diced tomatoes
    2 cups water

Tips

Furmano's Petite Diced Tomatoes with Green Chilies give this dish a nice little kick.


Directions

Saute veggies for 5 minutes. Add remaining ingredients. Cover and bring to simmer. Cook for 45 minutes, or until veggies are softened.

Serving Size: Makes 4 good size servings @ 176 calories each
