Chicken soup (noodles optional)

Number of Servings: 6

Ingredients

    14 oz cooked chicken breast - chopped
    10 cups swanson 99% fat free stock - low sodium
    3 C chopped carrots
    3 C chopped celery
    2 C chopped onion
    3 C chopped/sliced fresh mushrooms
    1 T sea salt
    1 T paprika
    2 T red pepper flakes (more or less to taste)
    2 T dried basil
    2 tsp garlic powder
    1 T thyme
    1 T rosemary
    pepper to taste

    OPTIONAL: Add some already cooked whole wheat egg noodles to make it chicken noodle soup - not in calorie count but add apx. 200 calories a serving for 1 C cooked noodles.

Tips

If you want noodles cook whole wheat egg noodles separately and add up to 1 C per bowl of soup. Each cup of noodles adds apx. 200 calories - I find .5 C is plenty


Directions

Spray a large pot with cooking spray
Over medium heat saute onion, after 3 minutes add chicken pieces and cook until done - add half the salt, some pepper and the paprika while cooking

Add chicken stock and the spices and simmer for 2 hours or so. During the last 30 minutes add vegetables,continue cooking until carrots are done.





Serving Size: Makes 6 servings of apx. 2 C each
