Tofu Croutons

Introduction

Good on salads and soups. Good on salads and soups.
Number of Servings: 4

Ingredients

    1 block extra firm tofu, drained and cut in 1/4 squares
    1/2 tsp kosher salt
    1 tsp black pepper
    1 tsp Italian seasoning
    1 tsp garlic powder
    1 tsp onion powder
    1/2 tbsp soy sauce
    Olive oil cooking spray

Tips

To remove excess water from tofu, place the intact block on a cooling rack. Put a weighted object on top and a plate below to catch the water.


Directions

Preheat oven to 350. Drain tofu, cut into 1/4 squares and place in mixing bowl. Sprinkle half of the dry ingredients and toss gently to avoid breaking the tofu.Sprinkle the rest of the dry ingredients and toss again. Sprinkle with soy sauce and give it a final gentle toss. Spread out on a foil lined cookie sheet that has been sprayed with cooking spray. Bake for 30 - 40 minutes.

Serving Size: Makes 4 1/2 servings @ 79 calories each
