Potato Soup

Number of Servings: 12

Ingredients

    6 raw potatoes, peeled and diced
    3 raw carrots, peeled and diced
    3 stalks of celery, chopped
    half of a medium sized onion, chopped
    yield from 1 pound bacon, cooked and crumbled
    1 can whole sweet corn
    6 cups Chicken broth
    2 cups Skim milk
    onion powder to taste
    garlic powder to taste
    parsley to taste
    salt and pepper to taste

Directions

Boil potatoes and carrots in chicken broth. When tender, remove from heat and mash to desired thickness. Sauté onion and celery until brown and tender while potatoes are boiling. Add onion and celery mixture to potato mixture after mashing. Stir in milk, corn, bacon, and seasonings. Continue to heat over medium low until corn is heated through. Serve hot.
