Blueberry Bread

Introduction

Ingredients

    For the bread:
    2 cups King Arthur Unbleached White Whole Wheat Flour
    1 cup All Purpose Flour
    1 tbsp corn starch
    2 tsp baking powder
    1 tsp salt
    1 cup Almond Breeze almond milk original
    1/4 cup olive oil
    3 tbsp sugar
    3 tbsp dried blueberries
    For the glaze:
    1/4 cup cream cheese, softened
    1/4 cup sour cream
    1/2 tbsp honey

Tips

I used Rumford baking powder because it is aluminum free.


Directions

Mix first five ingredients in a large bowl using a whisk. In a 2 cup measuring cup, stir the almond milk with the olive oil and sugar. Add almond milk mixture to the dry ingredients. Stir until smooth. Add the blueberries. Bake at 350 for 30 minutes. Mix the cream cheese with the sour cream and honey until creamy. Spread on top of warm bread.

Serving Size: Makes 12 2 inch wedges
