Slow Cooker Beef Stroganoff (Low Carb)

Ingredients

    8 oz top sirloin, thinly sliced
    1 tsp olive oil
    1/2 small onion, chopped
    2 cups mushrooms, sliced
    2 cups Low-Sodium beef broth
    187 ml white wine
    2 cloves garlic, chopped
    1 tsp Worcestershire sauce
    1/2 tsp herbs d'Provence or Italian seasoning
    1/4 c sour cream

Tips

The sauce is likely to be somewhat thin, so for best results, drain off the liquid and reduce over high heat for 10-15 minutes. Return sauce to beef and mushrooms, cool slightly, then fold in sour cream.


Directions

Brown meat in skillet with oil, add onion; saute until translucent. Transfer to slow cooker and add remaining ingredients EXCEPT sour cream, cook over low heat 6-8 hours. Allow to cool to warm, fold in sour cream, and serve over mashed cauliflower.

Serving Size: makes 2 hearty servings
