Basic Lowfat Muffin Recipe

Introduction

This is the basic recipe that I use to make the whole family happy. I add different nuts and/or berries to the individual muffin cups to satisfy every individual. Ingredients

    1 cup King Arthur "White Whole Wheat" flour
    1 cup rolled oats
    1 cup unsweetened applesauce
    1/2 cup raw cane (turbinado) sugar
    1 large egg
    1/2 cup nonfat milk
    2 teaspoons baking powder
    1 teaspoon baking soda
    2 tablespoons melted unsalted butter


Directions

Preheat oven to 375 degrees.
In a large bowl, combine all ingredients and mix well. Spray muffin tins with non-stick baking spray. Divide into 9 muffins. Bake for 25 minutes.

Every one in my family likes a different kind of muffin! So when the batter is divided into the cups I add different fruits and nuts according to each person's tastes, mixing them in with a small utensil. And for those who can afford some extra sugar, I shake a teaspoon of large crystal sugar on top of their "personal" muffin. Everybody's happy!
