White Bean Dip

Introduction

From Ellie's Krieger's Food Network program. From Ellie's Krieger's Food Network program.
Number of Servings: 10

Ingredients

    2 can white beans, drained (about 3 cups)
    2 TB roasted garlic
    3 TB EVOO
    3 TB lemon or lime juice
    1/2 tsp salt (more or less to taste)
    1/4 tsp pepper (more or less to taste)


Tips

A great vegie dip, chip spread, on sandwiches. Use like hummus.

Directions

To roast garlic: Wrap a whole bulb in foil and roast for 30 to 35 minutes in a 400 degree oven. Allow to cool. Remove roasted cloves (pressing out with the flat of a knife blade works well). Mash well.

Mix 2 TB of the mashed garlic to the remaining ingredients and puree in a food processor. Refrigerate in an airtight container.

Serving Size: .35 cups (about 7 TB)
