Lemony Green Bean Penne

Introduction

Found a recipe similar to this for asparagus, figured I would tweak it to use it for green beans. Found a recipe similar to this for asparagus, figured I would tweak it to use it for green beans.
Number of Servings: 5

Ingredients

    12 oz Ronzoni Garden Delight Penne
    1 T Coconut oil
    1 Red onion, sliced
    3 Cloves garlic, chopped
    4 C Green beans
    Peel of 1 lemon, grated
    Juice of 1 lemon
    2 Eggs
    3/4 C skim milk

Directions

In boiling water, cook the penne for 5 minutes then add the green beans for another 2-3 minutes. I chopped them into 2-3inch pieces.

Mean while, over medium heat put oil in med-large skillet. Sweat the onions, when soft add garlic, lemon peel and lemon juice. Combine the eggs and milk, add to skillet when lemon juice has evaporated. Stir until thickened and then add in the pasta and green beans.
