Ultra Light White Bean Chicken Chili

Introduction

a light version of a modern classic a light version of a modern classic
Number of Servings: 6

Ingredients

    2 15.5 oz cans Bush's Cennellini Beans
    2 16 oz cans Vegetable Broth
    1 lb Chicken Breast, no skin
    1 C white onion - chopped small
    1 T ground Cumin
    1 t white pepper
    .5 t chili powder

Directions

grill or broil the chicken (salt and pepper liberally)
while the chicken is cooking,
chop the onion and throw it in a crock pot
empty all the cans into a crock pot
(drain but DO NOT RINSE the beans)
when the chicken is done, cube or shred it and throw it in the crock pot
stir in the spices
cook for 4 hours on high
serve warm
(you can add in monterrey jack cheese, but that's no accounted for in the calorie count)
