Rice and beans with spinach and peppers

Ingredients



    Beans, black, 1.7 cup (1- 14oz/ 389mL can)
    Whole grain brown rice, 1/2 cup
    Onions, raw, 0.5 cup, chopped
    Garlic, 3 clove minced
    Red pepper, fresh, 0.5 cup, chopped
    Spinach, fresh, 3 cup (or the equivalent frozen)
    Red Ripe Tomatoes, 1 medium whole (2-3/5" dia)
    Avocados, California (Haas), 0.25 fruit
    Olive Oil, 1 1tsp

Directions

Cook rice as according to instructions.

Drain and rinse beans.

In sauce pan, sautee onion and add garlic. Add any spices you might like (oregano, red pepper flakes, your special mix...). Add in peppers. On a lower heat, add spinach. Add beans. Taste and flavour as needed.

When rice is ready, stir into rice.

When ready to serve, add a fresh chopped tomato and avocado.

Serving Size: Makes 4 1-2Cup servings
