Low-Carb Turkey Meatloaf Muffins

Ingredients

    Ground Turkey, 24 oz
    Onions, raw, 1 small, chopped
    Garlic, 4 cloves, minced
    Bell Peppers, .5 cup, chopped
    Spinach, fresh, 2 cup chopped
    Egg, fresh, whole, raw, 2 large
    Cream Cheese, 2 oz
    Parmesan Cheese, grated, .25 cup
    Salt, 1 tsp
    Italian Seasoning, 1 tsp
    Pepper, 1 tsp

Directions

Preheat oven to 350 degrees. Soften cream cheese in a large bowl, then blend together with eggs, parmesan, and seasonings. Add garlic, onions, and peppers and stir; fold in spinach. Work turkey gradually into vegetable mixture, mix thoroughly, and drop into greased muffin tin. Bake for approximately 25-35 minutes, until cooked through.

Serving Size: Makes 12 meatloaf muffins.
