Lazy tasty Soup

Introduction

I call it just soup because you can use any low sodium pureed soup that is under 100 calories as the base. Trader joe's has a few soups that are low sodium versions and I just chose the creamy tomato. It may be too bland for some, but hopefully the cheese can make up for that. Number of Servings: 2

Ingredients

    16 oz of Trader Joe's - Organic Creamy Tomato Soup (Low Sodium) or any other low sodium soup/broth

    2 oz. Barilla Whole Grain Rotini or any other shape pasta

    2 servings Bird's Eye Steam Fresh Mixed Vegetables

    3 cups fresh spinach

    2 oz of any brand of light/reduced fat mozzarella

Tips

if it is bland use non sodium derived seasonings such as garlic and onion powder, italian seasoning etc.


Directions

boil pasta til desired tenderness
microwave mixed veggies according to directions then portion out the amount called for.
boil tomato soup base in a sauce pan and wilt the 3 cups spinach in it.
when pasta and mixed veggies are done, add them to the tomato soup spinach mix.
divide evenly into 2 bowls
garnish each bowl with an ounce of cheese
