Vegetable small red and white bean w/ veggie bacon soup

Introduction

Quick prep vegetarian soup. 2 hours cook time. Quick prep vegetarian soup. 2 hours cook time.
Number of Servings: 1

Ingredients

    1/2 cup Safeway dry small red beans
    1/2 cup Safeway dry small white beans
    3 cups Water
    2/3 cup O'Organic's California vegetables, frozen
    1 & 1/3 cups O'Organics mixed vegetables, frozen
    1 tsp Olive oil
    3/4 tbsp Curry powder
    1/2 tbsp Cumin powder
    2 tbsp Cilantro, dried
    1/2 tbsp All, no salt added, seasoning blend
    1 tsp Salt (or to taste, optional)
    1/2 tbsp Garlic, minced
    3 strips Morning Star bacon strips, frozen


Directions

1/2 cups of each: Safeway small red and white beans.
Rinse ( cold water) in a colander and soak in 3 cups water for 6 hours.
Then add:
O'Organics Frozen California vegetable mix $ O'Organics Frozen mixed vegetables.
Also add herbs: curry powder, All ,no salt seasoning blend, dried cilantro, powdered cumin, salt to taste.
Add: Olive oil, minced garlic.
Bring to boil and simmer on low heat for 2 hours.
While soup simmers, crisp 3 strips of Morning Star Farm's bacon strips, as directed on container, and cut into small pieces.
Add bacon bits in the last 15 minutes of cooking soup.
Serve warm.
