Introduction

My grandma's banana bread recipe baked into muffins. I reduced the amount of sugar, margarine and flour she used, but they still taste amazing! A great way to use old bananas. Number of Servings: 12

Ingredients

    4 tsp. margarine, softened (or butter)
    0.5 cup granulated sugar
    1 egg
    1 tsp. vanilla extract
    1 dash of salt
    0.75 cup flour
    1 tsp. baking soda
    2 med. blackened bananas, mashed
    Cupcake papers (optional)

Tips

You can add crushed walnuts, raisins or chocolate chips for a little extra kick too!


Directions

In a microwave safe dish, melt margarine in microwave for about 20 seconds or until liquid. Add vanilla extract and egg to melted margarine and beat with a hand mixer until blended. In a separate bowl, mash blackened bananas with salt and baking soda. Add egg mixture, sugar and flour to the banana mixture and beat with a hand mixer until blended well. Line a muffin pan with cupcake papers and spoon mixture in. Bake at 350F for 25 to 30 minutes, until golden on top and a toothpick comes out clean. Let cool and enjoy!
