Whole Wheat Pretzels

Ingredients

    1 tbs dry yeast
    1 1/4 cup warm water
    1/4 cup brown sugar
    4 cups wheat flour
    2 tbs butter, melted
    kosher salt (about 3 tsp should be enough)

Directions

Mix yeast with warm water. Add brown sugar and flour until dough is no longer sticky. Do no knead too long or pretzels will not rise. Place in bowl in warm spot to rise for 20 minutes (I turn on the oven to 400 for 1 minute, turn it off, and put in the dough).

Punch down dough in middle (to release gas) then shape into pretzels. Place pretzels on cookie sheet (optional: sprinkle with cornmeal instead of greasing). Brush with melted butter, then sprinkle with salt. If using table salt, use less.

Heat in oven at 425 for 10-15 minutes. Makes 6-10 pretzels, depending on how big you make them.
