1 Cup Peanut Butter (preferably homemade or at least natural)
1 whole egg
2 TBS Artificial Sweetener (I used Diabeti Sweet)
Liquid sweetener to taste (I used 1 dropper Stevia Glycerite and 8 drops EzSweetz)
1 oz. unflavored whey protein powder
In the standard recipe, the only ingredients are peanut butter, sugar, and egg. And I've made these just subbing Diabeti Sweet for the sugar. However, they were *loaded* with sugar alcohol carbs, and quite frankly, made people ill if they ate too many. And sometimes one was too many.
Hence, I got the idea to try something else to add the bulk of the removed sugar.
Mix peanut butter with egg and artificial sweeteners. Add whey. Mix well until you have a dough. If the dough seems too soft, add a little bit more whey.
Form into cookies. These will NOT spread, so the shape you make them is the shape they will end up.
Grease a cookie sheet. Bake for about 5 - 7 minutes, then take out of oven, flip the cookies over, put back in oven for an additional 5 - 7 minutes. They will be tender at this point, but shouldn't completely fall apart.
