Introduction

This recipe is so simple you'll never use a mix again! This recipe is so simple you'll never use a mix again!
Number of Servings: 10

Ingredients

    1 cup all-purpose flour
    1/4 cup sugar
    4 tsp. baking powder
    3/4 tsp. salt
    1 cup yellow cornmeal
    2 eggs
    1 cup milk
    1/4 cup vegetable or canola oil

Tips

For a crustier pone, put greased skillet in oven while preheating and add batter to hot skillet. If doubling recipe, use larger skillet.

Directions

Preheat oven to 400. Grease an 8" iron skillet. (Can use an 8x8, 9x9 or round pan instead.) Combine dry ingredients in mixing bowl. Add eggs, milk and oil and mix well. Pour into prepared skillet and bake for 20-25 minutes or until knife inserted in center comes out clean. Remove from skillet and cut into wedges to serve.
