Dee's Health Bread

Ingredients

    1 Tbs. active dry yeast
    1 tsp honey or sugar
    .25 cup warm water
    1.75 cups warm water
    1/8 cup honey
    1/8 cup molasses
    1/4 cup Canola oil
    1/4 cup egg substitute
    1 Tbl lemon juice
    3.5 cups whole wheat flour
    1/4 cup ground flax seed
    1/4 cup instant oatmeal
    2 Tbl sesame seeds
    2 tsp. salt
    2 cups bread flour
    2 Tbl. Vital Wheat Gluten

Directions

Makes 2 loaves with generously sized 12 slices each

In a small bowl dissolve the yeast and sugar in 1/4 cup warm water. In a large bowl mix remaining 1 3/4 cups warm water with honey, molasses, oil, egg substutute and lemon juice. Mix well. Add yeast mixture and stir.

Gradually add 3.5 cups whole wheat flour, beating well after each addition. Add the flax, sesame seeds and oatmeal, stir well.

Stir in salt and the rest of the flours and the vital wheat gluten until dough pulls away from the sides of the bowl.

Knead 10-15 minutes until dough is smooth and elastic. Put into a greased bowl and cover; let rise until doubled in size.

Punch down and shape into 2 loaves. Cover and let rise until doubled.

Bake at 375 defrees for 30-40 minutes.
