Carnitas

Introduction

These are really good in tacos, burritos, and quesidillas. Throw a little greek yogurt on there for some tang and you are good to go. These are really good in tacos, burritos, and quesidillas. Throw a little greek yogurt on there for some tang and you are good to go.

Ingredients

    4 lbs Pork Shoulder
    1/2 Medium Yellow Onion
    3 Cloves Garlic
    1.5 C Swanson Chicken Broth 99% Fat Free
    1/3 C Lime Juice
    Cumin, Cinnamon, Salt, Pepper, and Corriander to taste

Tips

I added some cayenne to add some heat as well


Directions

1. Dice garlic and onions
2. Cut pork shoulder into roughly 6 smaller pieces
3. Sautee in large sauce pot until translucent, remove to bowl
4. Brown all sides of pork in same pan, remove to plate
5. Pour chicken broth into pan and stir with flat bottom spatula to get all brown bits off the pan
6. Add back in your onions, garlic, and meat
7. Once brought to a gentle boil, reduce to a light simmer and cover for 3 hours or until fork tender
8. Preheat oven to 350
9. Shred pork and put in a large baking dish
10. Add liquid until the dish is about half full
11. Bake in oven until liquid is nearly gone, or until carnitas reach desired crispiness
12. Enjoy!

Serving Size: Makes enough for roughly 25-30 tacos
