Butter almond thins

Ingredients

    1/4 cup softened butter
    1/3 c sugar
    1/2 tsp ground cardmon
    1/4 tsp salt
    1 large egg separated
    1 tsp almond extract
    1 tsp vanilla extract
    2 C all purpose flour
    2 c sliced balnched almonds
    4 Tbsp confectioners sugar

Tips

Delicious with Chef Meg's Balsamic Strawberries with Ricotta Cream. Also great with yogurt.


Directions

Preheat oven to 376; grease 19x12 jelly roll pan line with foil and grease foil.
With mixer on med beat butter, gran sugar,cardamon, salt until creamy and smooth. beat in egg yolk and extracts until incorporated. add flour and beat in until clumps form. scatter clumps on pan and with palm and fingertips press dough into thin even layer without any gaps. in med bowl beat egg white til frothy fold in almonds and 2 Tbsp of confectioner sugar. spread over dough pressing in dough gently. with pizza wheel or knife cut dough crosswise into 2in strips cut each one crosswise into 2 in squares. cut squares into triangles. Dust tops with remaining 2 Tbsp of confectioner sugar. Bake 15-18 mins until golden brown. Carefully break cookies into triangles. Store cookies in air tight container 2 day or in freezer up to 30 days.
