BillDad's WildTree Vegetarian Chili

Introduction

Easy to make, just takes time to cook the beans and be willing to chop some veggies. Easy to make, just takes time to cook the beans and be willing to chop some veggies.
Number of Servings: 22

Ingredients

    Cube rutabaga for 1.5 to 2 cups
    Process the following in food processor:
    4-5 celery stalks
    2 large carrots
    1/4 head of red cabbage (about 1.5 cups)
    3 small to medium onions
    1/2 bag of dry beans
    1 package of frozen chopped spinach

Directions

Quick soak or soak beans per package instructions
Cook dry beans per package instructions, save cooking water for stock
Set aside cooked beans and drizzle with red wine vinegar
Chop vegetables and put in stock pot with water from cooking beans
Simmer vegetables in stock water until soft
add beans, chopped spinach, and seasoning
Simmer another 30 minutes
Add salt to taste

Serving Size: Makes about 22 one cup servings
