Squashed Potatoes

Number of Servings: 4

Ingredients

    1/2 of a butternut squash, roasted
    4 large potatoes, cubed
    1/4 cup 1% milk
    1 tsp butter

Directions

cut squash in half and roast (freeze the other half, serve it with the dinner, serve it the next day ... ...)
roast the squash for about an hour (until soft) at 375F
cube potatoes, cover in cold water bring up to boil, then simmer until soft, drain, put back in pot
scoop out squash and combine with potatoes a little bit of butter and about 1/4 cup milk
mash and serve
