Whiter mushroom lasagna

Introduction

I developed this for my daughter who dislikes tomato sauce and loves mushrooms, and for my mother who's on a lower potassium diet. If you love tomatoes (like me) skip the white sauce and add more tomato/spaghetti sauce instead! Ingredients

    Pasta, Lasagna Noodles, 8 oz (No cook variety works well)
    Canned Tomatoes, 1 can
    Tomato Paste, 1/4cup
    Mushrooms, fresh, 8 oz., pieces or slices (browned in a skilled coated with cooking spray)
    Portabella Mushrooms, 8 oz.
    Milk, nonfat (skim milk), 1 cup
    Wheat flour, white, all-purpose, unenriched, 2 T
    Olive Oil, 1 tbsp
    Butter, salted, 1 tbsp
    Red Wine, 2 fl oz
    Mozzarella Cheese, part skim milk, 4 oz, shredded
    Parmesan Cheese, grated, 1 cup
    Cottage Cheese, 1% Milkfat, 3 cup (not packed)
    Egg, fresh, whole, raw, 2 large (beaten)
    Parmesan Cheese, grated, 1/2 cup

Tips

This is a Sunday dinner dish at our house, because it isn't a quick meal to make. But it freezes really well, so leftovers are weeknight fast.


Directions

Cook button mushrooms with tomatoes, wine and tomato paste. Make white sauce with flour, olive oil, butter and milk. Mix cottage cheese, beaten eggs, 1/2 cup Parmesan and a T dried parsley. Slice portabella mushrooms. Layer in 9x13 pan...pasta, tomato sauce, cottage cheese, pasta, white sauce, portabella slices, cottage cheese, pasta remaining tomato sauce, all remaining cheese.

Serving Size: Makes 12 3x3 inch slices
