MUSHROOM SCALLOPED POTATOES

Ingredients

    4 cups sliced or diced potatoes
    1 cup chopped onions
    1 can cream of Healthy Req mushroom soup
    1/2 cup lite sour cream
    1/8 t pepper
    1 t dried parsley flakes

Diabetic: 1 1/2 st.

Directions

Preheat oven 375. Slice potatoes in Large bowl. In med bowl mix soup and sour cream. Add pepper and parsley.
Add mixture to sliced potatoes.
Spread in 8X8 sprayed baking dish.
Bake uncovered 30 minutes. Uncover and bake an additional 30-45 minutes until potatoes are tender.
