Introduction

Slightly modified. A simple and light option to traditional cabbage rolls. With a short prep time, you can get in a 30-45 min workout while this casserole is baking. Slightly modified. Number of Servings: 12

Ingredients

    1 med head of cabbage, chopped
    1 lb extra lean ground turkey
    1 onion, chopped
    1.5 c tomato sauce (1 can)
    1.5 c diced tomatoes, no salt (1 can)
    3 cups chicken broth
    1 cup uncooked long grain brown rice.
    *Seasonings of your choice (I used paprika, hot sauce, worchestershire, salt and pepper)
    *(optional - top with grated cheddar cheese)

Directions

Sautee ground turkey with onions and seasonings in a non-stick pan. Chop cabbage. Combine rice with cooked turkey mixture, tomato sauce and stock. Turn into a casserole dish (I usually need to use 2 dishes - this makes a ton). Bake at 350 degrees for around an hour (up to an hour and a half) Stir part way through cooking. Top with grated sharp cheddar cheese.

*seasonings, sauce and cheese are NOT included in the nutrititional count.
