Crunchy Cucumber Salad

Crunchy Cucumber Salad

Introduction

Depending on how small you chop the veggies, this light summer side can be a salad or salsa. Pair the salad with grilled chicken or shrimp. As a dip, opt for endive, jicama slices, or lime tortilla chips. Depending on how small you chop the veggies, this light summer side can be a salad or salsa. Number of Servings: 6

Ingredients

Juice and zest of 2 limes
    1/4 teaspoon cracked black pepper
    1 tablespoon olive oil
2 English cucumbers, diced (and peeled if you prefer)
1/2 red onion, diced fine (about 1/2 cup)
2 stalks celery, diced (about 1 cup)
    1/4 cup chopped cilantro
1 jalapeno, seeds removed and minced

Tips

Are you serving the dish now or later? If you're making it ahead of time, toss the diced cucumber with 2 teaspoons salt in a colander. Place in kitchen sink for 20 minutes to allow the salt to pull out excess moisture from the cucumber. Rinse well, then drain.

Directions

Whisk together the lime zest and juice, pepper, and olive oil in a large mixing bowl. Add the remaining ingredients, and toss to combine. Serve chilled.

6 servings, 1 cup each

I goofed a bit--forgot to whisk the oil and lime juice together--and it was still very good. I will try it again--and will cut the cucumbers up smaller. I did leave out the jalapeno--didn't have any in the house. Will include next time! - 7/10/13

I, also, left out the cilantro and jalapeno (personal preference). Good refreshing salad for serving in HOT weather! - 7/9/13

I don't understand why people comment before trying it. Oh well. I have and it was good. It just seemed to me to be missing something to give it that "Wow" factor. But I liked the fact it's so healthy and a different type of side salad. - 7/9/13

It was ok - the lime was a little over-powering, especially after it sat overnight - it was really all I could taste. - 8/4/13

Authentic_me - many folk know from the ingredients that they will not enjoy the recipe. But with some different ingredients, they may really enjoy it.
Chillies or any hot peppers - I can't do. But I'll try it with different ingredients. I know this already.
So I can comment before I make it - 7/9/13

I'm not a cilantro fan, so I substituted fresh mint instead and left out the jalapeno. - 7/9/13

  • Substituted lemon juice & zest and Italian parsley because that's what I had on hand. Really liked this and it was a nice change from a regular salad with lettuce. - 8/26/13

I replaced the zest with a little apple vinegar and a teaspoon of vegannaise. Just enough to give it a much better taste. - 7/16/13

I didn't have the cilantro and I think that would have made a big difference, I love cilantro. To the leftovers I'm going to add some mint from the garden. - 7/11/13

I wonder if you could successfully substitute green chilies for the jalapenos? Think I will try it that way. :) - 7/9/13
