Faux General Tso's Chicken with rice

Introduction

A great substitute for General Tso's if you are craving some Chinese takeout! I have included the white rice in the final nutritional panel. Each person (4) receives a half cup of cooked rice. I also wanted to note that I put in a dash of red pepper flakes (aka hot chili peppers-depending on how hot you like your food) and I also put in 1 tbsp of white wine vinegar. Ingredients

    Chicken Breast (cooked), no skin, 12 ounces
    Chicken Broth, .75 cup (8 fl oz)
    Scallions, raw, 2 tbsp chopped
    Cornstarch, .125 cup
    Granulated Sugar, 4 tsp
    *Soy Sauce, 2 tbsp
    White Wine Vinegar, 5 gram(s)
    Ginger, ground, 1 tsp
    *Canola Oil, 2 tbsp
    Garlic, 2 clove
    *Hot Chili Peppers, .125 cup, chopped or diced
    *White Rice, medium grain, 2 cup

Directions

-in medium bowl, whisk together broth, corn starch, sugar, soy sauce, vinegar and ginger. Set aside.
-heat oil over medium-high heat.
-add scallions, garlic and red pepper flakes.
-cook, stirring frequently for two minutes
-raise temperature to high, and add chicken, saute until browned all over for about 5 minutes
-add reserved sauce to the saute pan and simmer until sauce thickens and chicken is thoroughly cooked.
-Serve with rice and enjoy!

Serving Size: General Tso's Chicken makes four 1 cup serving, serving size for rice is .5 cup for four people.
