Number of Servings: 20

Ingredients

    Carpendar Fat Fast Bread

    4 cups shredded coconut (cheap in bulk bin)
    3/4 cup flax seed meal
    1 TBS xanthan
    1 tsp erythritol or sweetener to equal 1 tsp (I used Splenda)
    1 1/2 tsp baking soda
    1/2 tsp salt
    1/2 cup water
    2 TBS cider vinegar
    4 eggs


Directions

Preheat to 350, grease nonstick loaf pan 8x4.
In food processor with S blade combine all dry ingredients. Process until fine meal.
While running drop each egg in food chute until incorporated. Then add water and vinegar. Blend thoroughly. Spoon into pan. Bake for 1 hour 15 min.
