Wedding Soup

Ingredients

    1 pound 93% ground beef
    1 large egg
    1/4 cup bread crumbs
    1/2 cup parm cheese
    1/2 tbs olive oil
    1 onion chopped
    2 carrots peeled and chopped
    2 stalks of celery chopped
    8 cups of low sodium chicken stalk
    1 bunch of spinach
    3/4 cup of orzo pasta

Directions

Combine beef with eggs and bread crumbs, cheese and good sized pinches of salt and pepper. Be careful not to over work the mixture and lightly form into metaballs - you should get 40 out of this

Heat olive oil in a large pot over medium heat add onions, celery and saute until veggies are soft. add stock, and spinach, bring to a simmer, turn heat down and add meatballs and pasta. simmer for another 10-15 mins

Serving Size: 8 servings

serving is 1 cup of soup and 5 meatballs
