Curried Mustard Salmon

Ingredients

    12 oz Salmon Filets
    PAM spray
    1/3 cup Orange Juice (I use Tropicana fit & healthy Premium juice)
    1/4 cup lemon juice
    1 tsp dried basil
    1 tsp dried tarragon
    1 tsp curry powder
    2 1/2 tsp olive oil
    3 Tbsp dijon mustard
    2 Tbsp finely chopped onion
    2 tsp brown sugar

Directions

Preheat oven broiler. Lightly grease a METAL baking pan. Place salmon on pan and spritz with PAM spray. Broil about 5 inches from heat source for 7 to 10 minutes or until salmon is cooked through and flaky. Meanwhile, in a saucepan over medium heat, combine next 7 ingredients (orang juice through mustard). Bring to a boil; reduce heat, add remaining ingredients and continue to simmer until sauce has thickened. Serve sauce over Salmon. (Serving suggestion: whole wheat couscous and asparagus and maybe a small side salad) makes four 3-oz servings of fish.
