Jicama and Pepper Salad

Introduction

This is great as a Mexican side dish -I serve it with my artichoke avocado enchiladas (look for the recipe -they're awesome!). Very fresh and tasty! This is great as a Mexican side dish -I serve it with my artichoke avocado enchiladas (look for the recipe -they're awesome!). Very fresh and tasty!
Number of Servings: 4

Ingredients

    2 cups diced jicama (raw)
    1/2 cup diced roasted red pepper (jarred in water)
    1/2 cup diced mango, raw
    1/2 seeded diced jalapeņo pepper, raw
    1 tbs olive oil
    1 tbs white vinegar
    salt and pepper to taste

Directions

Chop everything, combine in a bowl and leave it to mellow on the counter for 20 minutes. Refrigerate what you don't use and eat within 3-4 days.

Serving Size: Makes 4 servings -slightly more than 1/2 cup each
