Introduction

Number of Servings: 8

Ingredients

    Corn Muffin Mix, Jiffy, 1.5 cup
    Mixed Vegetables, Southern Home, 1/2 cup
    Flax Seed, Milled, Hodgson Mill, 1 tbsp
    Raisins, Seedless, California, Southern Grove, 2 tbsp
    Silk, Almond Vanilla, 2/3 cup
    Egg, fresh, whole, raw, 1 large
    Cheddar or Colby Cheese, Low Fat, 1/3 cup, shredded
    Cinnamon, ground, 1/8 tsp
    Granulated Sugar, 1/4 cup

Tips

Can reheat 2 mins in a microwave using power 2 or 3. Try variations by adding bacon bits, 1/4 cup frozen onion and peppers soup starters, or 1 cup muffin mix and 1/2 cup whole wheat flour, etc.


Directions

Preheat oven to 350.

Combine all ingredients in a mixing bowl. Pour into a greased baking pan.

Bake for 30 minutes.

Cut and serve warm.
