This dairy- and gluten-free leek and onion soup contains powerful sulfur-containing amino acids that help cleanse the liver and boost antioxidant production. And, it's delicious!

Number of Servings: 10

Ingredients

    4 leek, trimmed and coarsely chopped
    2 yellow onions, coarsely chopped
    2 cloves garlic, smashed
    1 tbsp extra virgin olive oil
    1/2 cup low-sodium broth (veggie or chicken)
    8 cups low-sodium chicken stock
    1/2 tsp unrefined sea salt
    ground black pepper, to taste

Tips

Serve with a salad or omelet for a complete balanced meal.


Directions

1. Heat olive oil and broth (NOT stock yet) over medium-high heat in a large pot.
2. Cook onions and leeks, stirring consistently for 10 minutes until they begin to soften.
3. Add garlic, stock, and seasoning. Bring to a boil.
4. Reduce heat and simmer for 40 minutes until all vegetables are tender.

Serving Size: Makes 10, 1-cup servings
