Tenderloin with Red Wine Blackberry Reduction

Introduction

I use this reduction over Beef or Venison tenderloin hence the use of garlic and onions but it could be used over a salad or anything else you like if you took out those two ingredients. Number of Servings: 6

Ingredients

    Beef Tenderloin - 6 6oz pieces
    Red Wine - 0.5 cup
    Balsamic Vinegar - 0.25 cup
    Brown Sugar - 2 or 3 Tbls
    Garlic - 4 Cloves or to taste
    Onion - 1 Medium. I use red because I like the flavour but use what you like.

Tips

Goes very well with the Simple Garlic Quinoa recipe found in Spark Recipes. Had it last night!


Directions

Cook onion and garlic in pan you plan to cook meat in. Cook for 3-5 minutes.

Add meat and cook. Salt and Pepper to taste.
Note: Leave a little under cooked as it will go back in pan at the end of the reduction.
Remove meat from pan.

Add remaining ingredients and cook down until thick.

When reduction is almost done put meat back in pan to warm up. Then serve. Spoon reduction on to meat and anything else you like
