1 cup Egg Beaters
1 cup cut up peppers
1/4 cup Atheno's reduced fat Feta Cheese
1 tbsp Olive Oil
In an 8 inch oven friendly frying pan, cook peppers in the olive oil until browned lightlly.
Add Egg Beaters to pan and sprinkle in the crumbled feta cheese.
Cook in the oven until puffed and slightly browned on the edges (about 10 minutes).
Cut in half and serve.
Great with sun dried polenta or an english muffin.
