Lemon Curd

Introduction

Ingredients

    3 lg. eggs
    1/4 c. butter
    1/3 c. lemon juice (fresh is better)
    1 t. lemon zest

Tips

The original recipe recommends using fresh lemon juice, but it is delicious made with bottled lemon juice, use whatever you have on hand.


Directions

1. Whisk eggs, sugar and lemon juice in a medium saucepan over med. low heat. Stir and continue to heat for 7 to 10 minutes until the mixture becomes to thick.
2. When the mixture has reached the desired thickness, remove from heat. You can strain through a fine mesh sieve to remove any lumps if desired, but it is fine without doing this, unless there are large noticeable lumps.
3. Stir in the butter until well incorporated and mix in lemon zest. Store in covered container in the refrigerator.

Serving Size: makes 2 cups
