Introduction

Yummy and not overly sweet muffins.
My version with less sugar and spices adapted from Complete Vegetarian cookbook.

Number of Servings: 12

Ingredients

    6 Tablespoons non fat milk
    1/2 Cup egg beaters
    1.25 Stick of unsalted butter
    2 Cups of whole wheat flour
    1 Teaspoon baking powder
    1/2 Cup cane sugar
    3 Tablespoons of cocoa powder
    2 Bananas
    1 Teaspoon Vanilla
    1 Teaspoon Nutmeg
    1 Teaspoon Cinnamon


Tips

I always think using cupcake liners makes for easier clean up.


Directions

Preheat oven to 400 degrees.
Place milk, eggs, butter and vanilla in bowl and whisk until combined.
Sift together the flour, salt and baking powder in a separate bowl. Add the sugar, chocolate and spices to the flour mixture. Slowly stir in the milk mixture. Fold in mashed bananas.
Spoon mixture into cupcake tins

Serving Size: 12 regular size muffins.
