Ingredients

    Eggplant
    Salt
    Flour
    Olive Oil
    Egg
    Milk
    Onion
    Bell Pepper
    Ground Turkey
    Ground Pepper

Directions

Skin eggplant and thickly slice tip to bottom. Salt both sides and boil for 5 minutes. Dry and place eggplant in refrigerator until chilled. Remove from refrigerator, flour both sides and place in 13x9 baking dish. Drisel with oil and bake until brown. Brown turkey, saute onions and peppers and layer into baking dish. Wisk milk, eggs, salt and pepper in bowl and pour over eggplant. Bake at 420^ for 15 minutes or until eggs are set.
