Tuna Salad

Ingredients

    1 or 2 cans water packed tuna, drained
    1 or 2 tbs mayonnaise
    1/4 to 1/2 cups shredded carrots
    1/4 to 1/2 cups celery, sliced very thinly
    1/2 to 1 cup baby spinach
    1 to 2 slices whole wheat toast
    pepper to taste

    optional ingredients: diced apples, sliced avocadoes,

    substitutions:
    italian dressing or oriental dressing


Directions

serve on a slice of whole wheat toast or a bed of lettuce. as a side dish, serve with pineapple tidbits, dried cranberries and almond slivers or sunflower seeds
