Jump Start Granola

Introduction

Super yummy crunchy granola to add to yogurt, eat as a snack, or with some milk. Super yummy crunchy granola to add to yogurt, eat as a snack, or with some milk.

Ingredients

    3 cups organic old fashioned rolled oats
    1 cup roughly chopped unsalted almonds
    1/4 cup roughly chopped unsalted cashews
    1/4 cup raw pumpkin seeds (pepitas)
    1/4 cup raw, unsalted sunflower seeds
    2 tbsp flaxseed
    1/4 cup organic unsweetened coconut flakes
    1 heaping tbsp natural (organic light) brown sugar
    1/4 cup honey
    1/4 organic coconut oil (melted) or coconut butter
    1 tsp organic (real) vanilla extract
    1/4 tsp sea salt
    1 cup dried fruit (unsweetened cranberries, blueberries, raisins, currants, cherries)

Directions

Preheat oven to 250 degrees

In a large bowl mix together oats, nuts and seeds, coconut and brown sugar.

In a small bowl combine honey, coconut oil (coconut butter), vanilla and salt. Combine the two mixtures and spread out on two baking sheets or one very large one.

Bake in the oven 75 to 90 minutes, stirring two to three times so granola browns evenly. Remove from oven and mix in dried fruit. Let cool to room temperature before storing in an air tight container.

Serving Size: makes 12 1/2 cup servings
