Susan's Mixed Meatloaf

Introduction

Number of Servings: 8

Ingredients

    1 lb turkey
    1 lb ground beef
    1/4 cup parmesan cheese grated
    1 egg
    2 tsp salt
    1 tsp pepper
    2 tsp curry powder
    1 tsp paprika
    1 large (leftover or prebaked)sweet potato mashed


    1 tsp vegetable oil
    2 cloves garlic, minced
    3/4 cup carrots, grated
    1 large sweet bell pepper, diced
    2 tbs worcestershire
    1/4 cup water

    oatmeal, quick cook oats

Directions

Heat veg oil in frying pan - add garlic, carrots and bell pepper - cover and cook for 2-3 minutes - add worcestershire and water and cook until vegetables are tender.

Mix the first 9 ingredients well-add cooled frying pan mixture and mix well.

Add oatmeal to desired consistency...less if you like it moister and less if you like it drier.

Form into two loaves.

Bake on 350 for about 35 minutes

Serving Size: Makes 8 - 4 oz servings
