Number of Servings: 6

Ingredients

    3 c. flour
    1 packet of dried yeast (1 oz.)
    1 c. water
    1 tsp salt

    1, 8oz. can tomato sauce
    1 tsp dried oregano
    1 tsp dried basil

    1 onion, sliced
    1 tsp butter

    1 oz. romano cheese
    1 oz. goat cheese
    10 oz. monzzarella cheese

    1/4 c. sundried tomatoes (not in oil)

Directions

For Pizza Crust:
Combine flour, salt, yeast, and water. Stir together, adding additional water, if necessary. Knead until incorporated, then let rest for 15-20 minutes. After resting, knead dough until silky and smooth--usually about 30 minutes (this may be done in a stand mixer, with dough attachment). Once kneaded, let rise, covered, in a warm place for about 2 hours. After the dough has doubled in size, fold the dough twice (to pop any large bubbles) and cut into six equal portions. Roll, stretch, etc. each portion into a 6-8 inch round. Each pizza will be quite thin.

Sauce:
Combine tomato sauce with basil and oregano. Simmer until thickened, about 15 minutes.

Toppings:
For onions, slice thin and sautee over medium heat in butter until carmelized.

For sundried tomatoes (dried, not packed in oil), reconstitute in 1 cup of hot water. This takes about ten minutes. Once soft, drain water, and slice tomatoes.

To assemble each pizza:
Add about 1 tbls of tomato sauce, spreading evenly. Add sprinkling of grated cheeses (keep in mind that you will be covering about six pizzas; use sparingly). Add other toppings. Bake at 500 degrees F for about seven minutes.
